Candy Cane Brownie Cookies: I Could Get Used To This Stay-At-Home Mom Baking Life

By | Uncategorized | No Comments

“Imagine there is a bank account that credits your account each morning with $86,400. It carries over no balance from day to day. Every evening the bank deletes whatever part of the balance you failed to used during the day. What would you do? Draw out every cent, of course? Each of us has such a bank, it’s name is time. Every morning, it credits you 86,400 seconds. Every night it writes off at a lost, whatever of this you failed to invest to a good purpose. It carries over no balance. It allows no over draft. Each day it opens a new account for you. Each night it burns the remains of the day. If you fail to use the day’s deposits, the loss is yours. There is no drawing against “tomorrow”. You must live in the present on today’s deposits. Invest it so as to get from it the utmost in health, happiness, and health. The clock is running. Make the most of today.”

Good day, GFYYC readers!

Let’s be honest, people. Season changes are no fun. I personally tend to spend these transitional periods reflecting on the times past and the times to come. I reminisce about the humid air, the longer days, and the endless green life everywhere you turn. I look ahead to the twinkling lights adorning the neighbourhood, the magic of a silent snowy night, and the warm hot chocolate paired cuddles. When we’re in these transitions, it’s so easy to let the time pass us by. Then we look back and wonder where the time went. With my new little family, I really want to stop doing this. I want to embrace every day, every moment, every smile and coo, every hug. A couple of days ago, my 5 month old laughed for the first time and sent her father and me into fits of crying laughter. That was a definite highlight of our lives. I can’t sit around and let the days pass by, because every day counts. Read More

Uncle Bill’s Chicken Recipe

By | Blog, Recipes | No Comments

This recipe just cannot be called anything else. Uncle Bill’s Chicken is the only thing it has been known as for my entire life. Fittingly, my Uncle Bill, a real guy, and my real great uncle, made it up, and it’s been in the family for years. It’s simple, delicious, and only requires 5 ingredients total.

Oatmeal Raisin Chocolate Chip Cookies (aka the Best GF Cookies I Have Ever Made)

Hello, dear readers! I have very graciously been allowed to rant to you all about my baking adventures. If you haven’t tried it yet, allow me tell you something: gluten free baking is not easy. I have personally been gluten free for roughly 3 months now, but my fiancé has been for 3 years. He has no official diagnosis, but with his mother and one older sister having the diagnosis, it was a no brainer. Read More

Hamburger Salad

By | Blog, Recipes | No Comments

Hamburger salad sounds a bit like an oxymoron, but that’s essentially what it is, so I’m going with it. You may look at it like a “deconstructed” burger as well, and that works too. If taco salad is considered a “salad” then so is this. I have to admit; with as common as taco salad is, its distant cousin hamburger salad now needs its time in the spotlight.

GFYYC Goodie Bag – Round Two!

By | Blog, lifestyle, News & Events | No Comments

Signed, sealed and delivered! On Tuesday, September 20th, 2016, we officially delivered the first shipment of the GFYYC Goodie Bags to subscribers in and around the city of Calgary.

We’re happy to report that we were able to fill our first goodie bag with over $58 worth of “goodies” contributed by various local businesses. Here’s what we had inside:

Local favourite The Coup provided each subscriber a copy of their cookbook full of recipes to be tried out at home. Paterson’s Cabin hand-crafted Celiac-safe lip balms for each and every person. Vin Room provided gift cards inviting subscribers to come into their Mission or West Side location and enjoy complimentary amuse-bouches for up to six people. And there was even something sweet! Cookie Mama submitted a buy one get one free coupon to pop in and grab a cupcake or a cookie.

We are now hard at work putting together all the details for our next shipment, to be sent out this December. We are looking for local businesses that offer gluten-free products (food or beauty) as well as restaurants in and around the city that feature gluten-free items on their menu. We want to be able to connect our large gluten-free community with all the businesses that are out there working hard to create and provide options for them—and this is how we plan to do it!

We have committed to one full year, with four shipments—one per season. And if it goes well, we’ll keep it going after that!

Registrations are officially open for next shipment, so if you haven’t already signed up—do it fast!

Una Pizza + Wine Restaurant Review

By | Blog, Dine Out, Dining | No Comments

It was a Saturday night, so we knew it would be busy, but when the friendly hostess at Una told us that for a table of 4 it would be 1.5-2 hours wait, we all agreed in unison to go have a drink elsewhere and wait it out, as they take down your number and give you a call when your table is ready. We had all been there many times before and knew it was going to be worth the wait. We finally were seated at 10:30pm, and the place was still packed, with a line out the door.

Awko Taco

I dunno by what sorcery the Mexicans have devised a means of delivering such a fulfilling and satisfying meal on these 5-inch, handmade disks of cornmeal pleasure, but it works. Brian Gebbie’s Awko Taco in Cochrane faithfully follows the two-thousand-year old tradition of serving tasty goodness, handful by perfect handful.

The Gluten-Free Restaurant Awards!

By | Blog, Dine Out, Dining, event, Food for thought, Interest, lifestyle, News & Events | No Comments

Calgary is full of awesome restaurants all over town, and ever since we emerged in 2012, we have been so pleased to watch as more and more of them began to offer gluten-free menu items that were safe for our community to enjoy.

First of all, we want to give them all some mad props. We can’t express how great it is to be able to go out and eat with your friends and be able to order at least something, and in some cases, a lot of things, off the menu. At Gluten Free Calgary, we like to show some love for these restaurants by featuring them on our GFYYC map and now we’d like to take it a step further and hand out some awards! Read More

Cottage Pie

By | Blog, Recipes | 2 Comments

It was just over a decade ago, when I lived in Ireland – the homeland of the savory pie, that I learned the difference between shepherd’s pie and cottage pie. It is actually where I first learned that such a thing as cottage pie actually existed, and that all the years prior to that moment, I was incorrect in my labeling of shepherd’s pie and that there WAS an actual difference.

gluten free Brazilian Cheese Bread

Brazilian Cheese Bread

By | Blog, Dining, Recipes | One Comment

Bread is the ultimate comfort food – and one of the easiest disappointments when it comes to eating gluten free. Most gluten free bread is dry, crumbly, grainy…anything but comforting! This bread will NOT disappoint. It’s a variation of traditional Brazilian cheese bread; crispy outside that’s fluffy and cheesy on the inside. This recipe is one of the most versatile recipes – the base is simple enough that you can add pancetta or spices or even cinnamon and honey to create a bread perfect to accompany your next meal. This recipe is also pretty foolproof and with little prep!
