This weeks Shortbread Cookie recipe is short but sweet! Feel free to add a little almond extract to bump up the flavor profile! Depending on your flour blend these will come out white-beige to grey-beige!
Easy 4-Step Shortbread Cookies
1 cup Butter or Margarine
½ cup Icing Sugar
¾ cup Cornstarch or Rice Flour
1 ¼ cup Gluten-Free All Purpose Flour (we like the Compliments brand from Sobeys)
Preheat oven to 275.
Cream the butter and icing sugar with electric mixer.
Gradually add the cornstarch and flour.
From here there are a couple of things you can do:
A) You can press the dough through a cookie press onto a lined or greased cookie sheet
B) You can spoon them onto a lined or greased cookie sheet
Bake 20 minutes. Feel free to add maraschino cherries that have been quartered on top!
