We caught up with her after the Gluten Free Expo, and found out she is a big supporter of what we’re doing here at GFYYC! She took some time to chat with us and even shared one of her favourite recipes for Protein Pancakes (see below).
You have so much energy! What do you attribute it to? Any tips? LOL Thank you! I would attribute that to 2 things. I was born quite high energy #2 I really make sure that I eat enough protein. As a celiac that is really important to help rebuild our villi and also increase lean muscle tissue and balance the blood sugar.
What are you most proud of in your career? I would say ending up on the Dr. Oz Show.
What’s next for you? Another book? Lots of new things in store…I just am not able to go public with it yet…but it is BIG!
What’s your all-time favorite meal? Hands down pancakes with peanut butter and pure maple syrup on it! Ever since I was a kid.
What is your go to order at a restaurant? My go to is always grilled chicken, on a mixed green salad, olive oil and balsamic vinegar, water with lemon and a baked potato.
Where have you been in YYC? Any highlights? I love YYC! I have been to the Olympic Oval to present and the green room of Global News, CTV and a cool cowboy boot store! Other than that it has been pretty much a whirl wind!
Protein Pancakes Recipe

Makes 2 large pancakes or 4 small ones.
Protein first thing in the morning will help to stabilize blood sugar, reduce sugar cravings and boost metabolism. My favourite meal of all time is pancakes! My mother has been making these for me ever since I can remember! These freeze so well and can be popped into the toaster for those rushed mornings. A perfect and delicious way to get your protein in- the Smart Way!
1/2 cup cottage cheese (2%)
1/2 cup oatmeal (quick cooking and wheat- free)
2 whole organic eggs
1 teaspoon vanilla extract
1/8 teaspoon of cinnamon
1-2 teaspoons coconut oil
1. Add all of the above ingredients to a blender and blend on high for 1-2 minutes or until smooth.
2. Heat coconut oil on medium heat onto a non stick frying pan and allow to become very hot ( 1- 2 mintues)
3. Pour half of the pancake batter onto the heated frying pan.
4. Allow to cook on medium heat.
5. When you start to see bubbles forming at the top of the pancake, flip pancake over.
6. Allow to cook on the other side.
