Well I thought it was about time I tried one of the lovely recipes I have been hearing so much about from our friend Amber Romaniuk (if you haven’t checked out her guest blogs, make sure you do!). Amber recently released her first gluten, sugar and dairy-free cookbook and we were lucky enough to attend the book launch party at Self Connection Books last month.
I’m not sure if any of you are like me and get somewhat overwhelmed with cookbooks. “But EVERYTHING sounds so good?!” is always my first thought. So why not start with this: take one ingredient from your fridge (and right now there is only ONE singular ingredient in my fridge – I have been away during the holidays, don’t judge!) and find a recipe that calls for it and off you go! I had a butternut squash in my fridge, so I checked out Amber’s ‘Garam Masala Butternut Squash Soup’. With prep time listed as only 15 minutes (lazy winter syndrome) I was sold and it was off to the grocery store for me, to pick up the other 8 missing ingredients!
Soup, what better comfort food on an icy night like that (YYC was sitting at a nippy -23 that fine evening).
Unfortunately I do not follow instructions well enough to grab the correct colour of onion so just an FYI, purple onions still do the trick 🙂 and I decided to add some spinach to my soup for some extra Popeye spunk.
The soup was thick and warm and with the perfect amount of spice and flavour. Not too intense, just cozy and smooth. Add wine (not in the soup, but for sipping whilst cooking of course) and there I had myself a perfect Sunday night supper. Mission complete.
