So, this week, my son told me that he had NEVER HAD GINGERBREAD. Can you believe it? The poor kid has been decorating these cookies his whole life and giving them away because he is allergic! So, I promised that for his cookie decorating play date this week I would make him gluten free gingerbread cookies!
1 1/2 cups unsalted butter or margarine (3 baking squares), softened
1 cup brown sugar
2 large eggs
1 cup molasses
1 tsp. baking soda
3/4 tsp. salt
1 tsp. cinnamon
1/2 tsp. ground cloves
2 tsp. ground ginger
5 cups all-purpose flour
With an electric mixer cream the Margarine, Sugar. Eggs and Molasses.
In a separate bowl, mix the remaining dry ingredients.
Slowly add the dry mixture to the wet mixture and continue to beat with the electric mixer.
CHILL THE DOUGH, for at least 2 hours. (This step is super important!!!)
After the dough has chilled, preheat your oven to 350 degrees.
Using a floured counter top, roll out the dough to about 1/4 inch thick. (This dough is really sticky so have lots of flour on hand!)
Cut into your desired shape and place on a lined baking sheet.
Bake for 10-12 minutes.
Let cool all the way before decorating with icing, sugar etc.
