Recipe: Gluten-Free Pecan Caramel Bars

Hi Everyone!
I hope you are having a great week filled with spooky fun! Here are some fabulous Gluten-Free Pecan Caramel Bars I made this week! The original recipe is from a blogger (Lui in Cucina). These were easy and rich! Everyone loved them.
You will need:Crust

2 cups       All Purpose Flour (as usual Compliments brand is my go to!)
1 cup         Brown Sugar, Packed
1/2 cup      Margarine (or Butter!), SoftenedCaramel
2/3 cup      Margarine (or Butter)
1/2 cup      Brown Sugar, Packed
1 cup         Pecans, Halved or Whole (I used extra because I LOVE pecans and I chopped them to get an even spread)Topping
1 1/2 cups  Chocolate Chips (I used extra because I also love chocolate!)
1) Preheat oven to 350. In a large bowl combine the crust ingredients. Mix well until combined (it should resemble fine bread crumbs)
2) Press crumbs firmly into a 9×13 pan. Sprinkle the pecans on top of the crust and set pan aside.
3) In a saucepan, combine the remaining brown sugar and butter, cook over medium heat. Stir constantly until mixture starts to boil. Without stirring, let boil for 30 seconds to 1 minute (I made the mistake of continuing to stir and my sugar didn’t dissolve properly! Opps!).
4) Pour the caramel over the pecans and crust. Bake for 17 to 21 minutes or until the entire caramel is bubbly and the crust is golden brown. Once removed sprinkle chocolate chips over top to let melt. Let the pan cool completely before cutting into bars.
