If you are anything like me, you are SICK of Turkey after this holiday season! It’s all I have had for days! So, we whipped something special and a little spicy to mix things up. This Taco Pie recipe will be unlike my other recipes… there will be NO MEASUREMENTS! Eek!
It’s OK, don’t panic.
It’s going to be easy peasy!
Ground Beef (we like lean or extra lean, or if you are vegetarian use re-fried beans instead)
Gluten Free Tart Shells (They have great ones available at Sandra’s Gluten Free General Store in the NW)
**The rest of these ingredients are optional, choose your favorites!**
Bell Peppers (your choice in colors, don’t be afraid to use more than one)
Onions (green, yellow or red)
Make/Bake tart shells according to directions.
Fry up the veggies of your choice in the quantities the you see fit… don’t be afraid to use too much, there is no such thing as too many vegetables!
Add the Ground Beef and cook through.
After the Beef is cooked through, add 1 cup of water to the beef/veggie mixture and 1 pouch of taco seasoning. Continue to heat until there is no water remaining.
Spoon mixture in heaping mounds into tart shells and top with cheddar cheese.
Set oven to broil and cook until cheese is melted and crispy. Serve with Salsa and Sour Cream (if you want to, or they are great without it!)
If you have extra filling you can freeze it for the next time you make Taco Pies or use it to make actual Tacos. Add it to rice or pasta with salsa and sour cream and top with cheddar cheese to make a great taco casserole/pasta bake!
