Recipe: Jalapeno Lime Sweet Corn Fritters

Hi Everyone!

I was watching the Food Network this week and I was inspired by Gordon Ramsay’s Ultimate Cookery Course. Be adventurous with this Jalapeno Lime Sweet Corn Fritters recipe and make substitutions and additions to taste!


You will need:
1 cup All Purpose Flour (I really like the compliments blend!)
1/2 tsp Baking Powder
1 Egg
Pinch Salt and Pepper (to taste)
1 Medium jalapeno (or two small or half a large)
1/4 cup Red Onion, chopped fine (adjust portion to preference, I REALLY like onion!)
1/4 cup Cilantro (for those of you who made coconut chicken last see this is a great way to use up the leftovers!)
Olive Oil
Lime Juice


To Make:
1) Add baking powder to flour, be sure to smooth out any lumps. Create a well in the center of your flour mixture; crack the egg into the well and mix.

2) Add in water (or milk) start with about 4 tbsp, add in liquid until your batter is slightly thicker than pancake batter. Season with salt and pepper.

3) Set batter aside. Chop jalapeno, onion and cilantro finely. Add ingredients to batter with a drizzle of olive oil. Be sure to keep smoothing out any lumps that may form! Add lime juice to taste, start with about a tablespoon.

4) Heat pan will olive oil. Using a soup spoon, scoop batter into the pan starting at the top and moving clockwise (so you know what order to flip them in!!). Flatten each scoop into a flat pancake-esque shape. Keep on medium high heat until cooked through and brown on both sides (or mildly black if your stove is as uneven as mine!)

Servings: 6-10 Fritters

Total Time: Approx 30 Minutes


My little man ate these up like they were going out of style! Corn is an ingredient that can be paired with a ton of flavors so don’t be afraid to experiment!
